Quick Pork Stir fry ‘sate’

250g pork mince
1 tablespoon crunchy peanut butter
1 tablespoon sweet chili sauce
2 tablespoons soy sauce
1 teaspoon fish sauce
a pinch of chili flakes
a handful of fresh baby spinach leaves or pak choi

 

 

In a heavy pan or wok, brown the pork mince until it starts to become crispy.  Then add the crunchy peanut butter, sweet chili sauce, soy sauce, fish sauce and chili flakes.  Cook on low heat and stir for 10 minutes.  Finally add the spinach leaves and stir until they just start to wilt.  Remove from the heat and allow to rest for 5-10 minutes before serving.

 

 

To make Perfect Jasmine Rice:

 

 

Start by measuring the rice and soaking it.  Each cup of raw rice should be enough to serve 2 persons.  Allow it to soak for an hour or more.  Rinse the rice until the water that comes out is clear.  This removes the starch from the rice and produces a better end-result.  Place the rice in a heavy pot with a lid that fits.

Add some salt to the pot and 1 ¼ cups cold water.  The ratio is 1 ¼ cups of cold to each cup of rice.

Bringing rice to a  boil. Cover the pot and reduce the heat to low.  Let rice simmer for around 15-20 minutes.  Remove from heat but leave covered until it is time to serve

Cypriot Style Wrap

You will need:

Some mixed fresh leaves
a few slices of tomatoes
1/8 teaspoon lemon juice
2 slices of halloumi cheese [I use chilli flavour]
1/2 teaspoon teaspoon olive oil
1 tablespoon dressing of your choice [I use Kuhne yoghurt dressing]
A wrap [tortilla]

Prepare the ingredients.

Slice the halloumi cheese.

Heat up some olive oil in a pan on medium heat.

Cook the halloumi cheese on both sides until they become a golden colour.

Prepare the fresh salad leaves and tomato on a warmed up wrap.

Top with a few drops of dressing of your choice.  [I use yoghurt dressing by Kuhne]

Place all the ingredients in the wrap.
Roll up and slice to serve.
