Quick Penne Bake with Chorizo, Jamon Serrano and Manchego

We continue with the flavors from Spain and for my penne dish duirng yesterday’s tv show, you will need:

500g penne
120g chorizo (I used a selection of cuts)
40g Jamon Serrano
150g fresh baby spinach leaves
100g tomato polpa mixed with 8 chopped cherry tomatoes
250g mascarpone
1/4 teaspoon smoked paprika
1/4 teaspoon garlic powder
150g manchego, grated
150ml pasta water
150g pesto (in the programme I used ready made pesto)
1/2 teaspoon grated lime zest (and this makes the dish special)
150g galletti
4 tablespoons mature manchego cheese
Freshly ground pepper
3 tablespoons olive oil
1 tablespoon fresh parsley to garnish

Preheat the oven to 200C and cook the pasta according to the instructions on the packet reducing 2 minutes of cooking time to leave it al dente.

Drain the pasta and keep 150ml of the pasta water to use in the sauce.

Chop the chorizo and on tv I used a variety of different chorizo.

Mix the mascarpone with the pasta water until it has a smooth consistency. Add the paprika, garlic powder and freshly ground pepper.

In a large bowl mix the chopped chorizo, grated manchego, tomato polpa mixed with cherry tomatoes, the mascarpone mix and pesto. Add the lime zest. Mix well and then add the spinach leaves.

Use a blender to grind the Maltese galetti and then add the grated mature cheddar and pulse the blender to get an even consistency. Add the olive oil, mix and keep aside.

Prepare an ovenproof dish by brushing it with olive oil.

Mix the pasta with 3/4 of the mascarpone and chorizo mix. Place half the mix in the ovenproof dish. Scatter some of the chorizo/spinach/cheese which you have kept aside.

Top with the rest of the pasta mix and scatter the remaining chorizo/spinach and cheese on top.

Crumble the galletti mix on top of the pasta and bake for 35 minutes at 180C.
